Simple Farmers Cheese....

1/2 Gallon Whole Milk
1/4 Cup of Apple Cider Vinegar

Bring milk almost to a boil...stirring often so you don't scorch.
Shut off heat/remove from heat and add vinegar. Stir until you start to see curds. Strain thru a cheese cloth lined colander until most of the liquid is removed.
The longer you strain it, the dryer your cheese will be!
Add salt, pepper and whatever herbs you would like.....enjoy!
Remember to save your whey and replace it for milk in your mashed potatoes, pancakes and baked goods!
